Sourdough Discard Sandwich Bread
This is my GO TO recipe for a quick and easy sourdough discard sandwich bread recipe. Start to finish it is ready in less than 4 hours! I’d love to make a pure sourdough loaf every single day, but in this season I’m all about this quick discard recipe! Making multiple loafs and throwing them in the freezer to pull out throughout the week is one of the best ways I save time while also prioritizing cooking as much as I can from scratch.
This recipe makes TWO sandwich loafs.
Ingredients-
200g sourdough discard
500g water
1000g unbleached organic all purpose flour
20g salt
40g sugar
120g melted butter
14g active dry yeast
Instructions- 1. Combine the sourdough discard, water and flour into a bowl and mix with your hands until it comes together. Let the dough sit covered for 30 minutes. 2, Add the salt, sugar, butter and yeast to the bowl and knead the dough for 5 minutes, adding flour as necessary. 3. Let it rise for 1 hour or until doubled 4. Turn dough onto counter, cut into two, and shape into loaf. 5. Cover with a tea towel to rise for another 30 minutes and preheat your oven to 350
6. Bake for 40 minutes, rotating the loaves at the 20 minute mark.
7. Remove and place on wire cooling rack, rub a little butter on the tops.
8, let cool completely and slice/store
