Sourdough Discard Chocolate Loaf

Ingredients- 100 grams sourdough discard 320 grams water 40 grams pure cane sugar
30 grams unsweetened cocoa powder
450 grams unbleached all purpose flour
140 grams chocolate chips
10 grams salt
7 grams active dry yeast
Instructions- 1. In a large bowl, mix together warm water, sugar, and active dry yeast. Let it rest for 10 minutes or until bubbly. 2. Mix in the sourdough discard.
3. Mix in the flour, salt, cocoa powder, and chocolate chips until everything is combined.
4. Cover with a tea towel and let it rest for 1-2 hours or until it has doubled in size.
5. Preheat your oven to 425 with the dutch oven inside 30 minutes before baking.
6. Take your dough onto a floured surface and roughly shape into a loaf, move to parchment paper, then score the top
7. Bake in the dutch oven at 425, covered for 35 minutes then uncovered at 400 for 15 more minutes.
8. Transfer to a wire rack and let it cool before cutting.
