June 14th Meal Prep

If there's one thing that makes our week run smoother, it's a solid Sunday prep session. With five kids, a homestead to manage, and a full week ahead, having a little bit of food ready to grab makes all the difference between a calm morning and a chaotic one. This week I knocked out seven different things, and I want to walk you through all of it. Simple food, real ingredients, and a fridge that actually works for you.
What We're Making This Week-
Homemade tortillas-Exclusive to the Kitchen Collective & Recipe Books
Soft, fresh, and miles ahead of anything in a plastic bag at the store — these tortillas are a staple in our kitchen. Once you make them yourself, it's really hard to go back. I used them this week as the base for our breakfast crunch wraps, which meant mornings were pretty much already handled before the week even started.
Breakfast crunch wraps- Everything you want in a breakfast, wrapped up and ready to go. Crispy bacon, golden roasted potatoes, eggs, and a sweet sriracha mayo I blended myself, all folded into a homemade tortilla and toasted until it holds together perfectly. My kids can grab one, warm it up, and have a real breakfast in under two minutes. No drive-through required.
Strawberry Blended Oats-Â Creamy, chocolatey, and packed with real ingredients. These are the kind of oats that actually make you look forward to breakfast. I blend them smooth so the texture is more like a thick pudding than traditional oats, and the strawberry chocolate combination hits just right. Make a batch, portion it out, and breakfast for the week is done.
Homemade granola bars- Exclusive to the Kitchen Collective & Recipe Books
Chewy, satisfying, and genuinely cheaper and better than anything you'd pull off a store shelf. I know what's in them, my kids love them, and they hold together the way a granola bar actually should.
Cookie Dough Yogurt Protein Cups-Â These little snacks are so easy and so good. Creamy yogurt, fresh strawberries, and a chocolate coating that makes them feel a little bit special. I made a big batch and they are perfect for an afternoon snack or something sweet after dinner without going overboard.
Teriyaki turkey meatballs-Â Homemade teriyaki sauce over tender turkey meatballs, these are pulling serious weight at lunch this week. Serve them over rice, tuck them into a wrap, or eat them straight off the pan because you can't wait. They reheat beautifully and the sauce is so much better than anything from a bottle.
