July 5th Meal Prep

Can you believe we're already halfway through summer, friend? One minute we're planning garden beds and pool days, and the next thing you know, August will be sneaking up on us. Which means now is the perfect time to get our prep rhythms back in shape. With five kids and a homestead to manage, having a little bit of food ready to grab makes all the difference between a calm morning and a chaotic one. This week I knocked out six different things, and I want to walk you through all of it. Simple food, real ingredients, and a fridge that actually works for you.


What We're Making This Week-

Sourdough Discard Sandwich Bread If your discard jar is getting full, this is the answer. Soft, sliceable, and perfect for everything from sandwiches to morning toast and it puts that discard to work instead of letting it go to waste. Two loaves on the counter at the start of the week means lunches are already halfway done.


Pigs in a Blanket These are always the first thing to disappear. Savory, handheld, and so easy to warm up. My kids grab them for lunch, for snacks, and honestly sometimes for breakfast too. Make a big batch, stash them in the fridge or freezer, and watch them vanish.


Balsamic Chicken Salad This one's pulling serious weight at lunch this week. Tender chicken, a tangy balsamic dressing, and enough substance to actually keep you full through the afternoon. Serve it over greens, tuck it into a wrap, or pile it on a slice of that sourdough sandwich bread, it all works.


Little Bite Pancake Muffins All the comfort of Saturday morning pancakes, in a grab-and-go form for the rest of the week. These little bites warm up in seconds, and the kids love that they can eat them with their hands. Perfect for those mornings when everyone needs to be out the door early.

Egg Bites White Cheddar + Bacon Creamy, protein-packed, and honestly better than anything you'd pay five dollars for at a coffee shop. Crispy bacon and sharp white cheddar folded into fluffy eggs, baked into perfect little portions. Warm two of these up and breakfast is handled in under five minutes. No drive-through required.


Cookie Dough Overnight Oats Breakfast that tastes like dessert but is packed with real ingredients? Yes, please. These oats have all the cookie dough flavor you're craving with none of the guilt. Creamy, chocolatey, and ready to grab straight from the fridge. Make a batch on Sunday, portion it out, and breakfast for the week is done.
