July 26th Meal Prep

Here's the little truth I want you to hang onto this week, friend. You do not have to do all of it. If the whole list feels like too much, pick one thing. Just one. Bake the bread, or batch the muffins, or get those egg bites in the fridge, and I promise you'll feel the difference come Wednesday morning. That's the whole heart of what we do around here, remember. Progress over perfection. Because meal prep was never about a perfect, color-coded fridge or checking off every single box. It's about setting future-you up for a little more calm and a little less scramble. So knock out what you can, leave the rest, and let even one small win carry you. This week I've got seven things to walk you through, and every one of them makes a busy week feel a bit more doable.
What We're Making This Week-
Freezer Waffles- Make a big batch on Sunday, let them cool, and stash them in the freezer so the kids can pop one straight into the toaster on a busy morning. All the comfort of a fresh waffle with none of the weekday mess. Top them with a little peanut butter and banana for staying power, and breakfast is handled while you're still pouring your coffee.
Rotisserie Chicken This is the hardest-working thing in my fridge this week. One whole chicken, cooked up and pulled apart on Sunday, stretches into so many lunches and dinners. Pile it into wraps, toss it over greens, fold it into a quesadilla, or stir it into a quick soup. A batch of shredded chicken ready to go is one of my favorite ways to get a head start when the week is already full.
Egg Bites- Creamy, protein-packed, and ready to warm up in under five minutes. These little portions handle breakfast without a drive-through in sight. Bake a batch at the start of the week and you've got a grab-and-go morning covered any day you need it.
Cheeseburger Bombs- These are the first thing to vanish every single time I make them. Savory, handheld, and stuffed with everything the kids love about a cheeseburger, all tucked into a soft little bite. Warm them up for lunch, snacks, or an easy dinner alongside some veggies. Make a big batch and watch them disappear.
Banana Bread Chocolate Chip Muffins- All the cozy flavor of banana bread with little pockets of chocolate in every bite, in a grab-and-go form that puts those spotty bananas on the counter to good use. The kids love that they can eat them with their hands, and they warm up beautifully for busy mornings.
Oatmeal Bars- Chewy, hearty, and perfect for tucking into a lunchbox or grabbing on the way out the door. These are one of my go-to homemade snacks when I want something that actually holds everyone over. (These are exclusively found in my Snack Stash book.)
Sandwich Bread- Soft, sliceable, and the backbone of an easy week. Two loaves at the start of the week means lunches are already halfway done, whether it's a simple sandwich, a slice of morning toast, or something to catch all that rotisserie chicken. Homemade bread on the counter just makes the whole week feel a little more put together.
