Some weeks don't need a big overhaul. They just need the mornings to feel a little less frantic and the "I'm hungry" chorus at three o'clock to have an easy answer waiting. That's exactly the kind of week I planned for.
I leaned into the parts of the day that tend to get away from us- the rushed breakfasts, the easy lunches, the snacks that vanish the second little hands find them. When those pieces are already handled, the whole week feels lighter. You're not standing at the stove half-awake or digging through the pantry hoping something turns up.
And here's what I always want you to hold onto: you don't have to make all of it. This was never about a perfect, packed-full fridge. Pick the one thing that would take the most off your plate this week, make that, and let it carry you further than you'd have gotten otherwise. A little effort now, a lot less scramble later. That's the whole heart of it.
This week I've got six things to walk you through, and every one of them is here to make a full week feel a bit more doable.
What We're Making This Week-
Homemade McGriddles- The one my crew asks for by name. Little chicken sausage patties tucked between soft, fluffy buttermilk pancakes, all ready to grab and warm up on the mornings we're already running behind. Making a big batch at the start of the week means everyone gets a warm breakfast without me scrambling at the stove. No stress, no rush, just something filling before the day gets going. Ham & Swiss Pinwheels- Rolled up in my own dough, these are one of those little things that make lunchtime feel a bit more special. They come together easier than you'd think, and I'm telling you, they disappear in seconds. Perfect for lunchboxes, an after-school bite, or handing off when someone needs something quick.
Grilled Balsamic Chicken Thighs- I've got these prepped and ready to go, and they might be the smartest thing I do all week. It Is so helpful having a protein option ready to go to toss over salads, heat up with some veggies, or a snack straight from the fridge.
Chocolate Chip Muffins- Of course there had to be muffins. There's just something about a fresh batch sitting out on the counter that makes the whole house feel cozier, and my kids come running every single time. These make an easy grab-and-go breakfast or an anytime snack, and they never last long around here, so I always make extra.
Granola Bites- My favorite little answer to the mid-afternoon snack attack. These are the perfect grab-and-go bite for busy hands and hungry bellies, great for tossing in a bag, packing for the road, or handing over on the way out the door. Small, simple, and gone before you know it. (these are exclusive to my recipe books / TKC members!)
Sandwich Bread- Soft, sliceable, and the backbone of an easy week. A couple of fresh loaves means lunches are already halfway done, whether it's a simple sandwich, a slice of morning toast, or whatever the week calls for. A loaf on the counter just makes the whole week feel a little more put together.
That's the lineup, friend. However much of it you tackle, I hope it takes a little weight off your week and hands you back a few of those small, calm moments. Ease in gently, do what you can, and leave the rest for another day.
