There’s nothing better than sitting down on Sunday with a plan for the week ahead. Having a meal plan in place not only saves money and reduces food waste, but it also takes the stress out of that daily “what’s for dinner?” question. This week’s menu is full of family-friendly meals made with simple ingredients, including Cilantro Lime Chicken with Coconut Rice, Cheeseburger Mac, Mongolian Beef, Homemade Pizza Night, and Smash Burger Tacos.

One of the best ways to make cooking from scratch feel sustainable is by doing a little prep work ahead of time. Below, I’m sharing simple ways to prepare ingredients, marinades, sauces, doughs, and vegetables in advance so your weeknight dinners come together much faster. Whether you have 15 minutes on a Sunday afternoon or want to knock out a full prep session, these tips will help make your week feel smoother and more enjoyable in the kitchen.

Fridays are our pizza and movie nights! We don't have a TV in our home, so every friday we set up the projector and make pizzas!

Saturdays are "Restaurant Nights"! I create a cute little menu with all our leftovers, and the kids get to "order" what they want! It makes cleaning out the fridge feel like a special event instead of a lame leftover dinner. We do that every Saturday to empty out the fridge for grocery day on Sunday! It also helps ensure Mama gets a REST on Saturdays and I don't have to actually cook dinner!
