Happy Monday, friends! A new week means a new dinner plan and this week I am giving you some meals that are absolutely worth doubling while you're at it. If you have a little extra time this week, make a double batch of some of these and put them in the freezer for a week when you know you'll need done for you dinners! Future you will be so glad you did.
🧊 FREEZING:
Chili:Â Cool completely, then portion into freezer bags or quart containers. Lay bags flat to freeze so they stack easily. Keeps well for up to 3 months, just thaw overnight in the fridge and reheat on the stovetop.
Smothered Burritos: Roll your burritos but hold the sauce. Freeze on a sheet pan until solid, then transfer to a freezer bag. When you're ready to eat, thaw in the fridge In a casserole dish, then pour your sauce over top, and bake covered at 375° until heated through.
Korean Beef:Â Cook your beef fully, cool it, and freeze flat in a zip-top bag with a little of the sauce. Reheat straight from frozen in a skillet over medium heat or thaw overnight. It reheats so well!
