3 Easy Make-Ahead Breakfast Recipes!
There's something about August, isn't there, friend? The light starts slanting a little differently in the late afternoon. The garden is still going strong but the mornings have that first whisper of a new season in them. And whether your kids are heading out the door to the bus or gathering around the kitchen table for our homeschool day, the rhythm of routine comes back whether we're ready for it or not.
I love this season. I really do. But I'll be honest with you, the mornings can be a lot. Five kids, lesson plans, chores, a full day ahead, and everybody hungry at the same time. For years I tried to cook a hot from-scratch breakfast every single morning, and all it did was leave me frazzled before 8 a.m. What actually changed our mornings wasn't cooking more -> it was cooking ahead.
So today I want to share three make-ahead breakfasts that live in my freezer this time of year. None of them are fancy. All of them buy you back your mornings. And every one of them lets you feed your people something real without standing at the stove while everyone's talking to you at once. Progress over perfection, always.
1. Egg Bites - the little protein powerhouses
If you only make one thing off this list, make these. Egg bites are the workhorse of a busy-morning kitchen: high in protein and endlessly customizable. In the morning, a quick reheat and breakfast is done. No plates, no fuss, and enough protein to actually carry a kid through math without a mid-morning meltdown.
2. Breakfast Crunch Wraps- the freezer MVP
These are the ones my kids ask for by name. Think of everything you love about a breakfast sandwich, folded up into a tidy little package that crisps golden in a skillet. They travel beautifully, they hold together in a hand, and they freeze like a dream. These go straight from the freezer into the air fryer until they're hot through and shatteringly crisp on the outside.
3. Homemade Freezer Waffles- our from-scratch "Eggo"
You know those frozen waffles you just pop in the toaster? We make our own version, and I promise it's easier than it sounds. Once you've done it, you'll have a freezer full of waffles ready to go for pennies compared to the boxed kind, and you get to decide exactly what goes into them! I make a double or triple batch of our regular waffle batter, undercook them slightly, then freeze them flat in a single layer on a sheet pan. Stack them in a freezer bag once they're solid. Come morning, they go straight into the toaster, just like the boxed ones! Crisp edges, tender middle, and a stack of them keeps the kids happy while I get the day started. Top with butter and real maple syrup, a smear of peanut butter and banana, or a little Greek yogurt and berries for something heartier.
A gentle word before you go
Here's what I've learned: a good morning routine isn't about doing it all perfectly. It's about setting your future self up for a little more peace. An hour of prep on the weekend can hand you back five calmer mornings.
